Sernik krakowski (Cracovian cheesecake)
Ingredients:
300g flour
250g butter
400g caster sugar
3 yolks
salt
800g dry cottage cheese
4 eggs
100ml of cream
3 tablespoons of potato flour
1 tablespoon of vanilla sugar
How to make it: ( it takes about 2 hours)
1. 200g of butter cut into pieces, add to flour mixed with 100g of caster sugar and a pinch of salt. Chop butter into pieces, add 2 yolks, pound dough with your hands, knead fast, wrap in foil and leave off in the fridge for 30 minutes.
2. Roll up 1/2 of dough, lay out the bottom of baking tray, puncture with fork and bake 10 minutes.
3. Grind cheese 2 times, pound with grinded butter, cream and potato flour. Grind 4 yolks with 300g caster sugar and vanilla sugar. Add small portions of cheese while pounding.
4. Whip whites to stiff foam, add to cheese and softly combine. Lay out on half-baked bottom.
5. Roll up the rest of shortcake and cut into stripes 1--1,5 cm wide. Lay them crosswise on cheesecake to make checkered pattern and spread evenly with whisked yolk. Bake 1 hour.
